One of my goals for 2012 was to try one new recipe a week. So far, Pinterest (one of my new obsessions) has made this possible. A few hits, a few misses (sweet potato fries tasted good, but I completely botched texture wise). But there is 1 dish that I absolutely have to rave about.

I cannot say enough good things about the EmilyBites website, first of all. I've made a few of the recipes, and so many more or on my to-make list. But this just jumped out at me. It looked SO good. And can easily be tweaked to include more (olives, veggies, jalapenos, etc) ingredients. Or you can omit the beans if you're like my bro-in-law and deathly allergic. Or perhaps try different meat. I went with the recipe as written, and served with sour cream.
I put the whole casserole together the night before, the most time spent was browning the ground turkey. Such an easy (and pretty healthy) meal, and one that we devoured like it was going out of style. I highly highly recommend. It will be making a regular appearance on my menu rotation.
